Hand-gathered in November at 1600 meters above sea level, our winter harvest of Alishan comes from a garden that has provided us with tea for the past seven years. This years winter harvest was characterized by a milder onset of cool weather, resulting in a less vegetal version of this classic tea. Alishan, Winter is floral and crisp,with a smooth texture and persistent finish.

This is our go-to brewing method for Formosa oolongs, since it balances each element of this styles character. For an even sweeter and richer taste, decrease you water temperature while extending brew time; for a brighter and more vegetal taste, increase your water temperature while slightly decreasing brew time.
