Though invented in Tang/Song Dynasty China, matchahas become known worldwide as the foundationof the Japanese Tea Ceremony and the pinnacle of Japan’s tea culture. Traditional Japanese matcha is crafted by grinding shade-grown green tea leaves (known astencha) in a stone mill to create a superfine powder. The shade-growing process forces the tea plants to boost production of chlorophyll, theanine, and many other compounds to cope withthe lack of sunlight. The result is an intensely vegetal and umami flavor with a vibrant green color.
